New recipe

Olivia and Monty made a great cake this afternoon. The cake needs no milk or eggs. It is great for Mont's sensitive skin.

Here's the recipe if you can't read the photo from the Amelia Bedelia book.

Amelia Bedelia’s Sheet Cake

3 cups flour
1¾ cups sugar
2 teaspoons baking soda
1 teaspoon salt
⅔ cup cocoa
¾ cup vegetable oil
2 tablespoons vinegar
1 teaspoon vanilla
2 cups water

Step 1
Sift the flour, sugar, baking soda, salt and cocoa directly into ungreased 9” x 13” pan. Add oil, vinegar and vanilla. Pour water over all ingredients. Mix with fork until smooth.

Step 2
Bake at 350 degrees for 25 to 30 minutes.

Step 3
Cool the cake and ice it in the pan with your favorite frosting.

  1. Hey, isn't this a vegan cake recipe? I need to collect vegan recipes so that I continue to bake for the high school faculty, several of whom are vegans.
